To answer your question, if you cut down right behind the gills and turn your knife down to the tail, then cut off the skin and cut out the bones.  You are then able to cook and eat this.  Opinions vary, but many think it's pretty tasty.

Why keep it? Simple. I keep all walleye over 14 inches. The bigger ones taste better in my opinion, and the NDG&F has stated repeatedly over the years that keeping large females does not impact walleye populations especially in natural reproduction lakes such as Sakalawea. Lake Audubon has a very low natural reproduction rate. It is a stocked lake. We have had discussions on FBO about this topic in the past. Devils Lake has very good natural reproduction and is where the G&F get all of their eggs for the stocking program. In the end, the real answer to why keep it? Don't worry...they will stock more walleye again in the near future. Keeping big walleye doesn't hurt anything.

I love how everyone gets concerned with keeping various sizes of the one specie thats stocked in our lakes by the millions.  The fish in which our lakes are designed around, even to spawn naturally in.  Enjoy these big fish now while you can, because as the high/low water cycle progresses they'll be harder to come by again.  No matter how many big fish you release, sooner or later their habitat won't support them and they'll starve & even die until the next high run off years fill the systems with nutrients and habitat.
 
Besides, stizo is being humane and preventing that big fish from starving when the next dry cycle comes...which seems to be arriving as we speak.
